Cooking method
- Scald the oranges with boiling water before you start. Once they're scalded, grind them up whole, peel and all — a meat grinder works, but a blender is better if you have one; a knife is slower and more tedious. Stir the ground mixture into 3 liters (about 3 quarts) of fresh water. Set it over medium heat and cook for 10 minutes. Strain it through several layers of cheesecloth to separate the pulp from the liquid. Stir a kilogram (about 5 cups) of sugar and 30 grams of citric acid into the hot orange water. Mix, then add 6 more liters of cold water and stir again. Divide the lemonade among bottles and let it sit for a couple of hours before serving.
