Fragrant Cauliflower Relish for Winter
A vegetable medley for food lovers. Wonderful aroma and flavor! The recipe is very easy to make. It's my son's favorite, and I've been making it for several years now.
Cooking method

Step 1:
Break the cauliflower into florets and boil in salted water for about 5 minutes. Drain in a colander, then transfer to a large pot. Seed the peppers, and peel the garlic and separate it into cloves. Run the tomatoes, peppers, parsley, and garlic through a meat grinder (or blend them). Pour this mixture over the cauliflower. Add the vegetable oil, vinegar, salt, and sugar.

Step 2:
Bring to a boil over medium heat, then simmer over low heat for 10–15 minutes. Ladle into sterilized jars and seal right away.

Step 3:
Turn the jars upside down and wrap them until fully cooled. Yield: 10 half-liter (16 oz) jars.
