Chicken and Cheese Pelmeni (Dumplings)
Pelmeni (dumplings) with cheese or chicken are a nice change of pace — lighter, yet still filling. Here's another take on dumplings made not from ground meat, but from finely chopped meat — in this case, hand-shredded into strands.

Cooking method
- Sift the flour into a mound, make a well in the top, crack in 1 egg, pour in the warm water, add salt, and knead a firm dough. Set it aside for 30 minutes. 2. Boil the chicken fillet, cool it, and pull it into strands; mix it into a single filling with 1 egg, the milk, grated cheese, salt, pepper, finely chopped dill, and minced garlic. 3. Roll the dough out thin on a floured surface and cut it into round circles (see photo). 4. Dust each round with flour on both sides and place a little of the chicken filling right in the center. Fold the round in half over the filling and pinch the edges shut, then bring the two corners together. 5. Lay the dumplings on a parchment-lined baking sheet and dust them lightly with flour so they don't stick together. 6. Put the sheet of ready-to-cook dumplings somewhere cold (or in the fridge) for 15–20 minutes. 7. Then cook them like regular pelmeni — boil or fry them for 5–10 minutes.
