Herring "Barrels" Salad

A wonderfully appetizing herring in an original double "fur coat." Delicious and easy. It's the familiar layered herring salad — "herring under a fur coat," a classic Russian dish of herring layered with beets, potatoes, and eggs — but this time rolled up. You can decorate it in an unexpected way, too; this is just one fun option for dressing up a herring salad.

  • Boil the vegetables and eggs, then let them cool. Grate the eggs. Mash the potatoes. Purée the beet and the carrot separately in a blender. Mix one portion of the potatoes with the beet, and the other portion with the carrot. Finely chop the onion, cover it with boiling water, and add a few drops of vinegar; after 20 minutes, drain and squeeze the onion dry. Clean the herring, chop it finely, and mix it with the onion. Spread one sheet of lavash with the beet-and-potato mixture, then spread mayonnaise on top. Lay down a second sheet of lavash. Spread out half of the herring and onion. Lay down a third sheet of lavash. Scatter the grated eggs over it and spread with mayonnaise. Lay down a fourth sheet of lavash. Spread it with the carrot-and-potato mixture, then mayonnaise on top. Lay down a fifth sheet of lavash. Spread out the remaining herring and onion. Roll the stacked lavash up into a log. Wrap the roll in the sixth sheet of lavash. Using a length of thread, cut the roll into small pieces. Stand the "barrels" on a serving platter, top each with a few pieces of herring, and garnish everything with dill.
