Masala Chai (Spiced Milk Tea)

Spiced tea is wonderfully good for you — you have to try it! I'd gotten so tired of plain tea and wanted something different. I found a recipe for an Indian tea called "masala." As we know, the East loves all kinds of spices and adds them to everything — and this is no exception: to make masala chai, first gather up an array of spices like cardamom and ginger. This tea is made with milk. I was very pleasantly surprised to learn that in India they drink tea with milk, too. I've always been a little lukewarm on tea with milk — I disliked it as a child, since we were always given it in preschool and later at school. But masala chai isn't even in the same league as that tea.

  • To make masala chai, first prepare all the spices: the nutmeg should be ground, and the fresh ginger chopped very finely, along with the cloves and cardamom. Then take a saucepan and pour in the milk. Add the tea and the prepared spices to the milk. Set it on the stove and bring to a boil, stirring. Once it boils, lower the heat and simmer for about 2–3 minutes. Then pour the tea into mugs. Masala chai should be drunk right away — if it sits, it loses that flavor. Enjoy your tea!
