Pan-Fried Chicken Cutlets
Tender, tasty cutlets to go with any side! What could be simpler than making cutlets from whatever meat you have? Chicken makes for cutlets that are leaner than, say, pork — and kids love the flavor.

Step 1:
To make chicken cutlets, start with the amount of chicken fillet you need. It should be fresh and soft, with a natural pink color and clean smell. Rinse it under running water, pat it dry with a paper towel, and cut it into pieces.

Peel the onion, rinse it, and cut it into several pieces.

Run the chicken through a meat grinder. Transfer the ground chicken to a bowl for mixing the cutlet base.

Now run the onion through the grinder too. Combine the ground onion with the chicken and mix.

Add the egg, salt, and dried spices to the bowl. For seasoning I use dried dill and parsley; you can also add a little ground pepper.

Shape the mixture into small patties with your hands and coat them in breadcrumbs. Place the cutlets in a hot skillet with a little vegetable oil. Fry on one side for 2 to 3 minutes.

Then flip and fry the other side over medium heat as well. Stack the cutlets in a small pot and cover with a lid so they can rest a bit. Serve the finished cutlets with any side dish or salad. A sour cream and garlic sauce goes well with them. Enjoy!
- Plenty of home cooks love this recipe for how easy it is. You could buy ready-made ground chicken at the store to make it even simpler, but I always grind my own — that way I know exactly what's in it and that there's nothing extra. If the ground chicken comes out dry, stir in a little kefir; it only makes the finished cutlets juicier. To make them heartier, you can work in some grated carrot and potato. Another common add-in is a piece of bread soaked in milk. Tender, tasty, and fragrant, these cutlets please the whole family, no exceptions. Cook and enjoy — highly recommended!
