Pan-Fried Potatoes with Onions

A hearty, delicious dish for lunch or dinner. Pan-fried potatoes with onions are impossible to turn down — they're that tasty and fragrant. Serve them on their own alongside your favorite vegetable salad, or as a great side for all sorts of meat, poultry, and fish dishes.

Cooking method

    How do you pan-fry potatoes with onions? Use medium-sized potatoes. Never use ones that have gone green or been frostbitten. Good potatoes are smooth, evenly colored, and free of blemishes. Scrub the dirt off the potatoes you've chosen and peel them with a vegetable peeler.

    Rinse the peeled potatoes in cold water. This washes off the excess starch so they won't fall apart as they fry.

    Then drain the water and pat the potatoes dry.

    Use a regular yellow onion. Peel it, rinse it, and cut it into pieces.

    Pour a little vegetable oil into a hot, deep skillet and add the chopped onion. Fry it until lightly golden, keeping an eye on it so it doesn't burn. Use a wide skillet so the potatoes sit in as thin a layer as possible — that way they fry evenly and actually fry rather than steam.

    Now add the sliced potatoes to the onion in the pan. Stir everything well and cook over medium heat for about 15 minutes. The time is approximate and will depend on the type of potatoes, the size of your pan, and so on.

    Don't forget to stir the potatoes now and then as they fry — a wooden spatula works well for this. Near the end, salt the potatoes and add a little dried seasoning. Stir gently and take the pan off the heat. Serve hot. Enjoy!

  • Fried potatoes are hardly diet food, but as long as you don't overdo it, they make a fine treat now and then. And you don't have to fry them in vegetable oil — butter, salt pork, or rendered lard all work. I especially like finely dicing salt pork and rendering it before adding the potatoes; they fry in the released fat and come out with a delicious, crispy crust. Highly recommended!
