Skillet Green Onion Flatbreads
The simplest, tastiest, quickest ones — for every day! These skillet green onion flatbreads cost next to nothing. Flour, green onion, oil, water, and salt — that's all you need. Use them in place of bread with any soup or main course. You can even fry them without oil!

Step 1:
How do you make green onion flatbreads? Gather what you need for skillet green onion flatbreads. I used all-purpose flour, but a lower-grade flour works too.

Use a wide, sturdy bowl that's easy to knead in. Sift the flour into it through a fine sieve so it's nice and airy — this makes the dough more supple. Set aside a little flour (about 3/4 ounce / 20–25 g) for kneading.

Make a well in the flour and pour in the vegetable oil so the dough turns out elastic.

Step 4:
Heat the water until moderately hot and dissolve the salt in it. Pour the hot water into the flour. Why hot? It makes the dough softer and more pliable.

Stir everything together with a spoon first.

Then knead the dough by hand. On a floured surface, knead it until smooth — it should be moderately firm and well kneaded. Wrap the dough in a towel or plastic wrap and let it rest for 20 to 30 minutes. Why? So the dough relaxes and the flour and water fully hydrate. It becomes more elastic and easier to roll out.

Step 7:
For the filling, wash the green onions under cold water and dry them well. Finely chop them.

Lightly flour the surface and roll the dough into a round, not-too-thin sheet.

Scatter the green onion over the dough, leaving a 3/4-inch (1.5–2 cm) border so the filling doesn't spill out when you roll it up. You can press the onion in lightly with your hand.

Roll the dough up into a log.

Cut the log into pieces, sized to however big you want the flatbreads.

Turn each piece cut-side up, press it down with your hand, then roll it out with a rolling pin into a not-too-thin round.

Heat a little vegetable oil in a skillet. Fry the flatbread over medium heat until golden on one side.

Then flip it and fry the other side. While one flatbread cooks, you can roll out the next.

Pile the finished flatbreads on a plate so they stay warm longer. They're good served cooled, too. Enjoy!
