Fried Jam-Filled Hand Pies

Whip up a light, fluffy treat for teatime — it doesn't get any better! Here's a really interesting recipe for hand pies made with potato dough. They come out airy and tender, with a soft, open crumb inside and plenty of filling. I deep-fry them for a golden crust. I make the dough by hand, but if you have a bread machine, use it. The quantities are sized for a crowd, so if your household is small, don't hesitate to halve everything.

  • These hand pies are really easy to make:
    • Peel and rinse the potatoes and boil them in lightly salted water until tender.
    • Drain off all the water and blend the cooked potatoes until completely smooth (add a little water if the mash is too stiff).
    • Into the potato mash, pour warm milk; add room-temperature butter, salt, and sugar; crack in the eggs; and pour in the vegetable oil.
    • In a separate bowl, sift the flour, stir in the dry yeast, then add it to the bowl with the rest of the ingredients.
    • Knead the dough (it will be sticky — you can oil your hands lightly to make it easier).
    • Let the dough rise until it grows in volume (40–60 minutes), then shape small balls, flatten them a little, add the filling (about 1 tablespoon each), and form the pies.
    • In a heavy-bottomed pot, heat the vegetable oil, add the pies (don't crowd them — 2 at a time, or however many fit the width of your pot), and fry on both sides.
    • Set the finished pies on a paper towel to absorb the excess oil, and let them cool.
