- How do you make beer-battered fried mackerel? Before frying, the mackerel needs to be marinated to tame its strong smell. Clean the fish, rinse it, fillet it, remove the bones, and pour the marinade over it for 30 minutes. For the marinade, stir together the wine and lemon juice. Beat the egg with the salt and pepper. Take the mackerel fillets out of the marinade and pat them dry with paper towels. Cut them into serving pieces if needed. Dredge each piece in flour, dip it in the egg, and fry in a hot, oiled skillet until golden on both sides. Enjoy!
- How do you fillet a whole fish? Remove the tail, head, and fins. Cut along the backbone down to the spine. Turn the fish on its side and, with a sharp knife, slice the meat away from the backbone. Flip the fish over and cut the fillet from the other side. Clean out the inside, removing the black membrane, since it's bitter and will spoil the flavor. Rinse well and be sure to pat it thoroughly dry.
- Any oil is only good up to a certain point — its smoke point, where it starts to burn and form toxic compounds, including carcinogens. To learn how to gauge frying temperature, which oils are best for frying, and which are better left out entirely, read here.
