Fried Eggplant Rolls with Cheese
An appetizer that's delicious, pretty, and simple! Fried eggplant with cheese and tomatoes is right at home on a holiday table — it not only looks great but delights guests with excellent flavor. Instead of mayonnaise you can use sour cream or even heavy cream; the generous amount of cheese makes the sauce amazingly good!

- Wash the eggplant and cut it lengthwise into planks. Put them in a dish or bowl, salt them, and leave for 20–30 minutes to draw out the bitterness, then rinse under running water and pat dry.
- Fry the eggplant planks in vegetable oil for 2–3 minutes, then set them on a paper towel to blot off the excess oil.
- Wash the tomatoes, cut them into rounds, and halve each round. Peel the garlic and press it; grate the cheese on a fine grater.
- Put the mayonnaise in a bowl, add the cheese and garlic, and stir. There's no need to salt the sauce — the mayonnaise is already salty, and so is the cheese. 5. Spread each eggplant plank with sauce, lay a piece of tomato on top, and roll it up like a small roll. Refrigerate the appetizer for an hour to an hour and a half.
- Serve cold, garnished with fresh herbs if you like.
