Step 1:
How to make fried zucchini with garlic for the winter? Prepare all the products that are listed. Zucchini for the recipe, if possible, take young ones. They have a thin, delicate skin and practically no seeds inside. Wash the zucchini well and dry it with paper napkins. If you have mature fruits, then cut off the peel and remove the middle with the seeds.
Step 2:
Peel the garlic and rinse in clean water. Cut the zucchini into circles about 0.7-1 cm thick.
Step 3:
The next step is the most time-consuming. Zucchini should be fried. To do this faster, use two frying pans at once. So, heat the odorless vegetable oil in a frying pan. Send the circles to the oil. Fry until golden brown on one side and on the other.
Step 4:
Put the zucchini on paper napkins. This will get rid of excess oil.
Step 5:
Pass the garlic cloves through a press or a garlic press. Rinse the dill umbrellas. Wash the jars and lids thoroughly and sterilize them by any method convenient for you. You can do this in a water bath, in the microwave or in the oven. Put an umbrella of dill and part of garlic on the bottom of the jar.
Step 6:
Next, make a layer of fried zucchini. Lay out some of the circles and add salt. Add some garlic again.
Step 7:
Then make a layer with zucchini again. Add salt and garlic. And so on until the jars are completely filled. In the process of filling the jars, shake them a couple of times to make the zucchini fit more tightly.
Step 8:
Pour vinegar on top of each jar. I got 20 ml. for one half-liter jar.
Step 9:
Cover the jars with lids. Cover the bottom of a wide saucepan with a thin towel. Put the jars in a saucepan, pour warm water over the shoulders and send it to the fire. After boiling, sterilize the zucchini for about 20-25 minutes. During sterilization, a liquid is formed in the jars, which will fill the container to the top.
Step 10:
Close the jars with lids and turn the top upside down. Wrap up with a warm blanket and leave to cool completely. After that, remove the workpiece for long-term storage in any cool dark place.
From the specified number of components, I got two cans of 0.5 liters each.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
You can check whether the oil has warmed up well enough in a frying pan in a simple way. Lower a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process.
