  • Fried fatback with onion comes together very fast. Use pork fatback — one with a streak of meat running through it tastes even better. Anyone can pull off this simple dish, and it makes a great snack. Tender fried fatback only comes from a piece of soft fatback with no tough sinew running through it. Don't choose one that's too thick, either — thick fatback tends to be from an older animal, so go for a medium-thick piece. A heavy-bottomed skillet works best for frying it. 1. Start frying the fatback in a preheated skillet — there's no need to grease the pan. As it fries, it renders out its own fat. 2. Use a large onion, and pick a sweet variety so it lends the fatback a nice sweetness. Peel it, rinse it, and cut it into medium-thick strips. Once the fatback starts to brown, add the onion. Stir often, since onion fries quickly and can burn. 3. In the last few seconds of frying, season with salt and pepper to taste. 4.
