Pan-Fried Kefir Hand Pies with Potato and Mushrooms
This dough comes together without any yeast. Making a light, airy kefir dough for fried hand pies is quick and easy.

Step 1:
Gather your ingredients. Make the mashed potatoes ahead of time. Dry-fry the mushrooms in a skillet over medium heat, without oil.

Trim the roots off the green onion and chop it finely.

Combine the potatoes, mushrooms, and onion, and season with salt and pepper. Mix everything well until smooth and even. The filling is ready.

Make the kefir dough. Crack the egg into a bowl, add the sugar, salt, and baking soda, then pour in the kefir and vegetable oil. Mix everything together.

In another bowl, combine the sifted flour and butter, rubbing them together with a fork. Pour the kefir mixture into the flour and knead into a dough.

Bring the dough together first with a spoon, then with your hands, until smooth. Cover it with a cloth and let it rest for 20–30 minutes.

Divide the rested dough into portions and shape each into a small round.

Place a spoonful of the potato-and-mushroom filling in the center of each round.

Pinch the edges closed and turn each pie seam-side down.

Do the same with the rest.

Pour the vegetable oil into a skillet, heat it up, and add the pies.

Fry the pies over low heat on both sides until golden. Once you flip them, cover the pan with a lid and keep frying.

Transfer the finished pies to a paper-towel-lined plate. Then move them to a pot and cover with a lid — this steams them slightly and makes them more tender.

Serve the hot potato-and-mushroom hand pies with sour cream. Enjoy!
