Fried Zucchini Rolls with Cottage Cheese and Herbs
You can swap the cottage cheese for mascarpone or another soft cheese. I had a couple of young zucchini languishing in the fridge and decided to make something new with them. My mother-in-law, who's a big fan of cottage cheese, was coming over, so the recipe more or less wrote itself around what we both like. As it turned out, the cottage cheese pairs beautifully with the fried zucchini, and this appetizer vanished from the table in no time.

Gather your ingredients.

Peel the zucchini and slice them lengthwise into thin planks.

Sprinkle the zucchini planks with salt and pepper and let them sit for 30 minutes.

Press the garlic. Wash the herbs, pat them dry, and chop finely. Combine the cottage cheese, sour cream, garlic, and herbs and mix well.

Dredge each zucchini plank in flour.
