Pike liver should be well rinsed under running water and allowed to stand in ice water for 30 minutes.

Now you need to beat the egg with butter, selected spices and salt. A slightly thick batter should turn out.

Ready-to-cook pike liver should be dried with a paper towel, a little seasoned with spices and salt and cut into small pieces. Dip the pieces of liver in flour, then in the egg mixture and then again in flour.

Fry in a hot frying pan on both sides until lightly golden brown for about 20 minutes.

The liver is ready and will go well with a vegetable salad.
