It's quite good for you and could not be easier to cook. Even prepared this simply — just pan-fried — redbait has a bright flavor and lovely aroma.

  • To make pan-fried redbait, start by prepping the fish: thaw it if needed; scale it, cut off the head and tail, and gut it carefully; then rinse the cleaned fish well, blot it dry with a paper towel, cut it into serving-size pieces, and season with salt and pepper. Next, set some vegetable oil to heat in a skillet, and while it warms up, dredge the pieces of fish in flour. Fry the fish over high heat for 3–4 minutes on one side, then 3–4 minutes on the other. After that, flip the fish once more and fry another 2 minutes. Serve the fried redbait with a side of fresh vegetables. Enjoy!
