Cooking method
To prepare fried red-eye, you first need to prepare the fish itself:
- defrost if necessary;
- the red-eye must be cleaned of scales, cut off the head and tail, and carefully gutted;
- thoroughly wash the prepared carcasses, blot with a paper napkin, cut into portions, add salt and pepper.
Next, you need to put vegetable oil to warm up in a frying pan, and while it is warming, pan the prepared pieces of red-eye in flour.
Fry the fish on high heat on one side for 3-4 minutes, then on the other side for 3-4 minutes. After that, turn the fish over again and fry it for 2 minutes.
Serve fried red-eye with a side dish of fresh vegetables.
