Fried Bitto Cheese in Breadcrumbs with Sesame Seeds

- To make fried cheese with sesame seeds, start by setting out three bowls. Put the flour in the first. Crack the eggs into the second and beat them lightly. In the third, combine the breadcrumbs and sesame seeds — it's a nice touch to toast them first in a dry skillet for a couple of minutes. Cut the cheese into sticks, then dredge each in flour, dip in egg, and roll in the breadcrumb mixture until fully coated. Set the finished sticks on a plate, and repeat with the rest. Now heat oil in a deep pot (or use a deep fryer) until hot. Working in batches of 4 or 5, deep-fry the cheese sticks for 2 to 3 minutes, until they turn a nice golden brown. Transfer them to a paper-towel-lined plate to drain off the excess oil. Your sesame-crusted fried cheese is ready — serve it with your favorite dipping sauce or alongside other dishes.
