- If you've picked up or just cooked some fried chicken and aren't sure what special thing to make with it, here's a wonderful Italian recipe. It takes no real effort and comes together in minutes. It's very popular in Italy, where home cooks often turn to it for an easy dinner. Fried chicken salad with yellow pepper works for both an everyday meal and any holiday table — and it's perfect for anyone who'd rather not spend much time in the kitchen. To start, take a knife and pare the zest from two lemons, cutting it into thin strips or grating it. Then peel away the thin white pith from both lemons so you're left with just the clean flesh. Set the zest and flesh aside in a separate bowl for now. Now for the chicken: since it's already cooked, just remove the skin and bones and add the meat to a bowl — you want about 2 full cups of chicken meat in all. Add the reserved lemon, the sliced cheese, and the yellow pepper to the chicken. Toss in the marjoram leaves. Season with sea salt and black pepper to taste.
