Step 1:
Take fresh meat and heat it to room temperature. Using a sharp knife, cut the pork into portions.
Step 2:
Cover the pieces with cling film, beat off a little with a special meat hammer. The film is necessary in order not to damage the structure of meat fibers during beating and so that splashes of meat juice do not fly in different directions.
Step 3:
Sprinkle the beaten meat with salt and spices. Rub everything over the meat with your hands. Let him lie down for 20 minutes.
Step 4:
Before frying, pour a little flour into a flat plate. Roll all the pieces of meat in flour.
Step 5:
Heat the frying pan very well and pour a little vegetable oil. Put the meat in the pan freely so that the pieces do not touch. Fry 2-3 chops at a time. Fry the meat for 2-3 minutes until golden brown.
Step 6:
Then turn the meat to the other side and fry for 2-3 minutes in the same way. Then remove the pan from the heat and cover with a lid. Let the chops lie down for a little rest for 10-15 minutes. During this time, the meat juice will be evenly distributed throughout the piece. Delicious, juicy chops are ready! Baked potatoes, baked or fresh vegetables can be served with such chops. For cooking chops, it is best to use meat that has not been frozen. Chops from thawed meat are obtained dry due to the fact that a significant part of the juice flows out of the meat during thawing.
Chops can be cooked not only from pork. You can take beef or poultry. But such meat is very easy to dry out and the finished dish will be tough and tasteless.
Pork for chops can be taken with small inclusions of fat. Thanks to this, when frying, the fat will melt and the meat will be juicy and soft.
Pork chops are combined, absolutely, with any side dish. And they are good as an independent dish! You can supplement them with any sauce, for example, garlic.
