Pan-Fried Lavash with Sausage and Cheese
A tasty hot snack made from lavash, sausage, and cheese. These little lavash squares stuffed with sausage and cheese are a crowd-pleaser. Savory, filling flatbread with a crisp golden crust, a tasty filling, and gooey melted cheese — perfect for breakfast or an everyday snack. (Lavash is a thin Middle Eastern–style flatbread; a flour tortilla makes a fine stand-in.)

Step 1:
Gather your ingredients. Use a lean cooked deli sausage, or hot dogs if you prefer. Any cheese works — mine is firm, but soft or semi-firm is fine too. One egg might not be enough, so keep a spare on hand; it depends on how generously you coat the lavash in egg before frying. I use dill, but any herb you like will do.

Step 2:
Unwrap the sausage and cheese, grate them on the coarse side of a box grater, and put them in a deep bowl. Rinse and dry the fresh dill, chop it finely, and add it to the sausage and cheese. Stir in the mayonnaise and mix everything thoroughly. There's usually enough salt for me, but add a little if it tastes like it needs it.

Step 3:
Take the lavash out of its package and lay a sheet flat on the counter. Spread the filling in a strip along one edge (don't be stingy with it) and roll the lavash up tightly so the filling stays inside. Cut the roll into pieces sized however you like — mine were about 2 1/2-inch (6 cm) squares.

Step 4:
Set a skillet over the heat with a little vegetable oil. Crack the egg into a deep bowl, beat it lightly with a fork, and salt it if you like. Dip each piece of lavash in the egg on both sides and lay it in the hot skillet.

Fry the stuffed lavash on both sides over medium heat until golden: brown one side first, then carefully flip it — so the filling doesn't spill — and brown the other side. Transfer the finished squares to a paper-towel-lined plate to blot the excess oil.

Serve the fried lavash with sausage and cheese hot, while the crust is crisp and the cheese inside is still stretchy. It's a great snack with tea or coffee, and kids especially love these little squares.
