Skillet Meatballs in Gravy
A hearty, delicious meat dish for dinner! Meatballs are always a hit, and they're really simple and easy to make. Follow the steps and even a beginner cook will nail this one. A satisfying, tasty dinner is all but guaranteed.

Step 1:
To make the gravy, peel the onion and rinse it under cold running water. Finely chop it with a sharp knife.

Heat a little vegetable oil in a hot skillet and sauté the chopped onion until golden.

Peel and rinse the carrot. Grate it on the coarse side of a box grater and add it to the onion in the skillet. Sauté everything together for 1–2 minutes.

Step 4:
In a separate bowl, mix the sour cream and tomato paste until smooth. Stir in a little water.

Step 5:
Pour the sour cream–tomato mixture into the skillet with the vegetables and bring to a boil.

Step 6:
For the meatballs, add the egg and chopped fresh herbs to the ground meat. Sprinkle with a little salt and spices to taste. Mix everything well until smooth. Throw the meat mixture against the bottom of the bowl a few times to firm it up, so the meatballs hold together during cooking.

Step 7:
With wet hands, roll small meatballs and drop them into the simmering sauce in the skillet. Turn them now and then. Cover and simmer over medium heat for about 20 minutes.

Step 8:
At the end of cooking, thicken the sauce. Stir the flour into a little cold water until there are no lumps.

Step 9:
Pour the flour slurry into the skillet with the meatballs. Bring everything to a boil — as it heats, the sauce thickens and turns beautifully glossy. Serve the meatballs over mashed potatoes, rice, or spaghetti. Garnish with chopped green onion, if you like. Enjoy!
- You can use any kind of meat for the meatballs. For extra flavor in the sauce, add a little bell pepper. The meatballs themselves will taste only as good as the gravy that comes with them, so make it rich and fragrant. I'd also suggest stirring a little garlic into the sauce near the end of cooking for aroma — as long as it agrees with you.
