Step 1:
How to make egg pies? First you need to make the dough. You can cook it according to your favorite recipe or buy ready-made. I'm going to make dough with sourdough. Prepare the sourdough. In warm milk (no more than 40 degrees), add yeast, a tablespoon of sugar and flour. Mix everything, cover and remove to a warm place until a cap is formed - a sign of yeast efficiency. The remaining products for the preparation of the dough should be at room temperature.
Step 2:
Melt butter in a water bath. In a deep bowl, mix the sourdough, salt, sugar, egg and mix well until the sugar and salt dissolve. Then add 250 grams of flour and mix. Next, add the melted butter, vegetable oil and knead the dough. It turns out not cool, sticks to your hands, but do not add extra flour yet. Cover with a towel or cling film sprinkled with water and put the dough in a warm place.
Step 3:
The dough should increase 2-3 times. After it has increased, it must be besieged and allowed to rise again. Repeat this procedure 2 times, adding a little flour. The dough should already be soft and pliable, practically not sticking to the hands.
Step 4:
To prepare the filling, pre-boil and cool the eggs. Peel the eggs and cut them into small cubes. Wash the green onions thoroughly and cut them not coarsely. In a deep bowl, mix the chopped eggs and green onions, add a pinch of salt and mix. Add salt if necessary.
Step 5:
Knead the dough that has come up and divide it into koloboks (the weight of my koloboks is 55 grams, but it's better to make it smaller). Cover the blanks with a towel each time so that they do not chafe.
Step 6:
Roll out each bun into a round cake, put the filling in the middle and pinch the edges so that the filling does not fall out. So prepare all the pies.
Step 7:
Heat the vegetable oil in a frying pan, make the fire lower than average. Put the prepared pies in a frying pan and fry first on one side, then on the other until browned. You can use the lid. When using more oil, the pies will be fried more evenly.
Step 8:
Serve ready-made pies with onions and eggs both warm and cold.
Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
It is important to sift the flour to saturate it with oxygen. Then the baking will turn out to be airy and will rise well when baking.
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
