Skillet Eggs with Melted Cheese
A simple fried-egg recipe made from the most everyday ingredients. It's great for a filling breakfast, and with a few meaty add-ins it becomes a solid lunch. The recipe is easy and approachable, and it cooks up in a skillet in just 15–20 minutes.

Step 1:
Gather all your ingredients. Use large eggs, ideally farm-fresh — they not only taste great but have a deep-yellow yolk. The oil can be sunflower, olive, or any vegetable oil. Any kind of cheese works here too: hard, soft, or even processed cheese.

Heat the vegetable oil in a nonstick skillet.

Crack in the eggs. You can leave the yolks whole or break them, whichever you prefer. Fry over medium heat until nearly set. Eggs cook fast — usually 5–7 minutes.

Season with salt. At this point you can also add your favorite spices, seasonings, and herbs. Go easy on the salt, keeping in mind that the cheese may be quite salty itself — adjust to the cheese you're using.

Lay the cheese over the eggs. You can grate it or slice it with a knife — and the slices can be thicker or thinner, whatever you like. Cover the pan and wait for the cheese to melt.

Serve right away, while the dish is hot and the cheese is soft and stretchy. Enjoy!
- We're used to eating fried eggs mostly for breakfast, but this recipe is really just a base. You can also add pieces of vegetables to the pan — broccoli, zucchini, onion, eggplant, whatever you like. Or toss in pieces of sausage, hot dogs, or even yesterday's leftover chicken or meat for a heartier version. Those variations work well for lunch or dinner too. Serve the dish right away while it's hot and the cheese is still soft and stretchy, before it firms up. Garnish with chopped fresh herbs (cilantro, basil, and dill are great), green onion, and minced garlic. Serve alongside a fresh seasonal vegetable salad, or simply with cherry tomatoes and sliced cucumber — pickled is nice too. It's delicious! Enjoy!
