Pan-Fried Battered Chicken Breast
Juicy chicken fried in a light batter. To shake up your everyday menu, here's a quick, budget-friendly dish: battered chicken breast. It comes out tender, juicy, and delicious — and it's a perfect match for pasta at dinner.

Step 1:
Gather your ingredients. I use fresh chicken; if you're using frozen, thaw it — but not all the way, so it's easier to slice. Use any spices you like; I use a chicken seasoning blend. I'm making a sour-cream-based batter, but feel free to use your own favorite. Have a skillet ready for frying.

Rinse the chicken breast under cold running water and pat it dry with a paper or kitchen towel. With a sharp knife, cut each breast crosswise into pieces about 1/2 to 3/4 inch (1.5–2 cm) thick. Pound each piece lightly on both sides with a meat mallet — not too hard, so you don't tear the meat. Doing it through plastic wrap is handy: no splatter, and the meat stays intact. Season each piece with salt and pepper on both sides, and sprinkle on your spices, distributing them evenly.

For the batter, use a small deep bowl. Crack in a raw egg and beat it lightly with a whisk. Add salt to taste — but go easy, since the chicken is already salted. Add the sour cream, stir again, then whisk in the flour until there are no lumps.

Heat the skillet and add a little vegetable oil. Dip each piece of chicken into the batter so it's fully coated on both sides. Lay the pieces in the hot skillet and fry over medium heat until golden on each side (about 5–7 minutes per side).

Serve the battered chicken hot. It's great with pasta for dinner, and some fresh vegetables or a salad rounds it out nicely. Once cooled, the chicken also makes a great snack tucked into a sandwich.
