Khychiny with Potato Filling
Very tasty flatbreads you can throw together quickly for lunch. They come out golden and buttery, with a lovely flavor and aroma. If the flatbreads have cooled, I'd reheat them in a skillet or the microwave before serving.
Cooking method

Step 1:
Gather all your ingredients.

Pour the kefir — any fat content works — into a deep bowl. Add the baking soda and salt and stir.

Add the flour and mix thoroughly until the dough is smooth.

Knead a stiff dough and slap it down against the counter a few times. Leave it out to rest for 30 minutes.

Cut the peeled potatoes into pieces and put them in salted water. Set over the heat and cook for about 20 to 30 minutes, until tender.

Peel the garlic and rinse the green onion. Grate the garlic cloves on a fine grater. Finely chop the green onion with a knife.

Drain the potatoes and mash them into a purée.

Add the garlic, green onion, and salt to taste. Mix well with a spoon.

Step 9:
Divide the dough into 6 small balls.

Step 10:
Flatten a ball with your hands and place the potato filling in the center.

Pinch the edges closed.

Step 12:
Turn the ball seam-side down and roll it out into a flatbread about ¼ inch (0.5 cm) thick.

Heat a dry skillet and lay in the flatbread.

Cook over medium heat on both sides until golden. Covering the skillet with a lid helps the dough cook through.

Step 15:
Stack the flatbreads on a plate, brushing each with butter — real butter, not a spread or margarine. Cut the stack into 4 and serve. Enjoy!
