Eggplant Rolls with Walnuts

Step 1:
To make eggplant rolls with walnuts, you'll need: 1 large eggplant or 2 medium ones; 3 tablespoons vegetable oil; 1 teaspoon salt.

Wash and dry the eggplant. Cut it lengthwise into thin slices.

Salt the slices and let them sit for 15 minutes. Gently squeeze out the excess moisture. I didn't rinse the salt off, since the filling wasn't very salty.

Fry the eggplant slices in vegetable oil on both sides until golden.

Transfer the finished eggplant to a plate and let it cool.

Prepare the filling ingredients. For the filling you'll need: 1¾ ounces (50 g) walnuts; 1 clove of garlic; a bunch of cilantro; 1 tablespoon water.

Peel the garlic. You can cut the clove into a few pieces.

Put the walnuts, garlic, and cilantro in a blender. Pour in the water and add salt and pepper. Blend everything into a thick paste — more or less smooth, however you like it.

Spread 1 tablespoon of the walnut filling on each eggplant slice.

Roll up the eggplant slice. Do the same with all the remaining rolls.

Arrange the rolls on a platter and sprinkle with chopped nuts, then garnish with cilantro sprigs and pomegranate seeds. Enjoy!
