Apple Puff Pastry Turnovers
Absolutely delicious, budget-friendly, quick, and made from simple ingredients! You can make these apple puff pastry turnovers from store-bought dough any number of ways. I make mine with caramelized apples, but you can swap in fresh or dried apples, or use preserves, jam, or fruit butter — apple or otherwise — to cut down the prep time even more.
Cooking method
-
Step 1:
How do you make apple turnovers? First, take the puff pastry out of the freezer and let it thaw at room temperature. Meanwhile, get started on the filling. For the filling, use sweet-tart apples. Wash them, core them, and cut them into cubes.
-
Step 2:
Heat a skillet until hot. Melt the butter in it and add the sugar. Keep an eye on it so the sugar doesn't start to scorch.
-
Step 3:
Add the diced apples to the pan and stir well. As they cook, the apples will release their juices and the mixture will look watery.
-
Step 4:
Keep cooking the apples over medium heat until the liquid evaporates and they turn soft. Then take the pan off the heat and let the apple filling cool.
-
Step 5:
Lightly roll out the thawed, softened puff pastry and cut it into rectangles of roughly the same size. On half of the rectangles, cut slits like the ones in the photo.
-
Step 6:
Spoon a couple of tablespoons of apple filling onto the uncut rectangles. Be generous — since the filling is already cooked down, almost none of it will leak out during baking. Top with the slit rectangles and press the edges to seal.
-
Step 7:
Arrange the turnovers on a parchment-lined baking sheet. Brush the tops with egg yolk and sprinkle with a little sugar. Bake in an oven preheated to 350°F (180°C) for 20–30 minutes. The finished turnovers will puff up a bit and turn a nice golden color. Take them out and let them cool slightly. Help yourself and share with family and friends. Enjoy!
- I always keep some puff pastry in the freezer. Turnovers, buns, and little pastry envelopes come together so quickly that I sometimes treat myself to these easy recipes. And you can fill them not just with apples, but also with cottage cheese, jam, or dulce de leche.
- Keep in mind that every oven is different, so your temperature and cooking time may vary from what's listed here. Get to know your own oven's quirks to make sure any baked dish turns out well.
- Besides store-bought pastry, you can also use homemade dough. Look for a homemade puff pastry recipe if you'd like to make your own.
