Step 1:
How to make a lean cabbage pie with cabbage? Measure out the necessary ingredients for the dough. Take odorless vegetable oil. Heat the water slightly.
Step 2:
In a wide container with high sides, sift the flour so that it is enriched with oxygen. As a result, the dough will rise easily and the pie will turn out lush and soft.
Step 3:
In a small bowl, combine yeast, 1 tsp sugar (from the smallest amount) and about 50 ml of lukewarm water. Mix everything well and leave for 10-12 minutes to activate the yeast. A foam cap will appear on the surface. This means that yeast is active and suitable for dough preparation. If yeast activation does not occur or the cap is formed very slowly, it means that the yeast quality is low and they should be replaced.
Step 4:
In a deep, capacious bowl, combine the rest of the water with salt and sugar. Stir until dissolved.
Step 5:
Add activated yeast, stir.
Step 6:
Pour vegetable oil, mix well.
Step 7:
Pour in the sifted flour. Do not pour out all the flour at once, so that the dough does not turn out too steep. Flour may need less or more than the specified amount, since it has different properties.
Step 8:
Mix the dough first with a spoon. Pour the rest of the flour in small portions, stirring the dough at the same time. Observe its consistency.
Step 9:
Knead the dough. It turns out to be homogeneous, soft, pliable, almost not sticking to the hands. Lubricate the bowl with a small amount of vegetable oil, lay out the dough. Cover the dough with a towel and leave in a warm place to rise for 70-80 minutes.
Step 10:
While the dough is rising, prepare the filling. You can make the filling in advance. Any mushrooms will do, I have champignons. If you use frozen forest mushrooms, then they must first be thawed and boiled.
Step 11:
Peel onions, wash, cut into small cubes.
Step 12:
Wash the champignons, dry them. Cut the mushrooms into small cubes.
Step 13:
Wash the cabbage, remove the upper coarse leaves. Chop the cabbage into thin strips.
Step 14:
In a frying pan, heat the vegetable oil slightly, put the chopped mushrooms. Fry the mushrooms over moderate heat until almost cooked, stirring occasionally.
Step 15:
In parallel, fry the prepared onions in another frying pan with the addition of vegetable oil. At the same time, stir frequently so that the onion does not burn.
Step 16:
Put the cabbage in the frying pan with the onion, continue to fry over moderate heat. If necessary, add vegetable oil.
Step 17:
Cover the pan with a lid and simmer the cabbage over medium heat, stirring occasionally.
Step 18:
When the cabbage is almost ready, put the fried mushrooms in the pan. Season the filling with salt, add ground black pepper and mix well.
Step 19:
Fry the filling for another 5-10 minutes until fully cooked.
Step 20:
Put the finished filling in a plate and cool.
Step 21:
The dough came up. It has increased in volume by 2.5 times.
Step 22:
Gently knead the dough, put it on the table, sprinkled with flour. Divide the dough into 3 parts: more for the bottom layer of the pie, less for the top and quite a bit for decorating the pie on top (optional).
Step 23:
Roll out most of the dough into a round layer, transfer it to a sheet covered with parchment. You can bake a pie in a mold. For this volume of dough, any heat-resistant mold with a diameter of 20-22 cm is suitable .
Step 24:
Put the cabbage filling on the dough, leaving a distance of 1-1.5 cm from the edges .
Step 25:
Also split a smaller part of the dough. In the center of the rolled dough, make a hole for steam to escape. Close the filling with dough. Lift the edges of the lower layer of dough and connect it with the upper one. Pinch the edges well in a convenient way.
Step 26:
From the remains of the dough, you can cut out various figures, patterns and decorate the cake on top. Cover the future pie on top with cling film or a light towel and let it stand for 15 minutes.
Step 27:
Before baking, you can lubricate the pie with a small amount of vegetable oil or tea water. Bake a lean cabbage pie in a preheated 180C oven for 30-35 minutes until golden brown. The baking time and mode may vary. Take into account the peculiarities of your oven.
Step 28:
Cool the finished cake a little, cut into portions and serve to the table. Enjoy your meal!
Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
