Smoked Chicken and Bean Salad
Incredibly tasty, quick, made from simple ingredients — perfect for dinner! This salad with smoked chicken and canned beans is easy to throw together, and homemade croutons fried with a mix of spices give it a savory kick. Serve it warm or chilled, with or without mayonnaise — and add a little grated apple for extra juiciness!

Step 1:
Ready to make a smoked chicken and bean salad? Gather all the ingredients. Drain the canned beans. Rinse the raw carrots well under running water to wash off any dirt. You can use store-bought croutons or make your own from bread — I'll be using homemade ones.

Cover the washed carrots with cold water, bring to a boil, and cook for about 20 to 25 minutes, until tender. Then cool and peel them, and cut the peeled carrots into small dice for the salad.

To make croutons, cut the bread into 1/2- to 3/4-inch (1.5–2 cm) strips, then into cubes. You can simply toast the bread cubes in a dry skillet, or add a little oil — I prefer them fried in oil, which makes them more fragrant and crisp. I like to season them with a little salt, and you can mix in various spices and dried herbs for extra flavor.

To assemble the salad, combine the canned beans and diced carrots in a roomy bowl.

Cut the smoked chicken into small cubes and add it to the bowl.

- The salad looks neat and attractive if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
- Homemade mayonnaise is worth the effort — it's tastier and better for you. You can also dress the salad with sour cream or plain yogurt instead of mayonnaise, either on their own or mixed with mayonnaise in any ratio you like, which cuts the calories.
