Fried Yeast Dough Puffs (Pyshki)

Delicious homemade pyshki — puffy, golden, and filling! These fried dough puffs are anything but light or low-calorie, so plan them for breakfast or lunch — or dinner, if you're deliberately trying to put on a little weight. At their heart, they're simply pieces of yeast dough fried in oil. You'll need a generous amount of oil, since the dough soaks it up readily as it fries. Pyshki are best hot and fresh, so it's a good idea to make only as many as you'll eat that day.

Cooking method

    To make delicious milk pyshki, you'll need good fresh milk, all-purpose flour, granulated sugar, a little fine salt, good-quality dry yeast, and vegetable oil for frying.

    Warm the milk to about 100°F (37–39°C). In a large, roomy bowl, stir the sugar together with the dry yeast, then pour the warm milk over the mixture. Stir, cover, and set it in a warm spot for 15 minutes. If the yeast is good, you'll soon see it react with the warm sweet milk: foam and small bubbles will form. If there's no clear reaction, it's better to use different yeast.

    Then add 200 g of sifted flour, stir, and let it sit for another 30 minutes in a warm place.

    Add the remaining 100 g of sifted flour and the fine salt, stir, and let it rise for another 2–3 hours. The dough will grow noticeably in volume. Punch it down with hands greased with vegetable oil. Shape the dough into puffs of whatever size you like, dusting them lightly with flour or oiling your hands, since the dough may stick a little.

    Heat the vegetable oil in a skillet, add the puffs, and fry them over medium heat on both sides until golden. Larger puffs will also need a little time under a lid over low heat so they don't stay raw in the center.

    Serve the milk pyshki hot with fresh sour cream, jam, or sweetened condensed milk.
