Step 1:
Prepare the ingredients according to the list. The dough for tortillas will be made on kefir, there is nothing wrong if it is not very fresh, on sour kefir the dough, on the contrary, will turn out better.
Step 2:
Kefir should be warm, it should be removed from the refrigerator in advance and left on the table for a couple of hours, or slightly warmed up. In a bowl with kefir, add baking soda and salt, mix so that the reaction occurs faster, the bubbles that appeared on the surface of kefir indicate that everything is going according to plan.
Step 3:
Pour the sifted wheat flour into a bowl with a liquid mixture. Add it in parts, mixing the dough, you can not pour all the flour into the bowl at once, so that the dough does not become dense, otherwise the tortillas will turn out solid.
Step 4:
The dough turns out sticky and soft. It is not necessary to knead it with your hands for a long time, the main task is to collect the dough into a lump. Cover the bowl with the dough with a towel and leave to "rest" for 20 minutes on the table.
Step 5:
Meanwhile, let's prepare the filling for the tortillas. Cottage cheese is better to use natural, fatty and necessarily fresh. Rub it through a sieve or punch it with a blender, it should be homogeneous in consistency, large grains of cottage cheese will not allow you to roll out the cake with the filling thinly and can tear the dough.
Step 6:
For the filling, as a rule, fresh greens of onion, dill and parsley are used, the composition of the greens can be changed to taste. In winter, you can use frozen greens, it does not affect the taste of tortillas. The greens are washed and finely chopped with a knife.
Step 7:
Combine cottage cheese with herbs in a bowl, add salt and ground black pepper to taste, mix the ingredients until the curd mass is obtained. The filling is divided into 4 equal parts for tortillas.
Step 8:
The "rested" dough is divided into 4 equal parts.
Step 9:
We roll out each of them into a thin round layer. In the center we spread one part of the curd filling.
Step 10:
We fasten the edges of the dough, forming a ball with filling, make the ball flat, sprinkle it with flour on both sides.
Step 11:
And roll out with a rolling pin into a thin cake.
Step 12:
In a dry frying pan, fry the tortilla for 3 minutes on each side, over medium heat, keep the tortillas in the pan until browned. If the tortillas begin to swell, then we make several punctures with a fork. To make the filling in the cake baked, cover the pan with a lid.
Step 13:
Remove the tortillas from the pan and immediately lubricate with butter on both sides so that the tortillas become soft and tender to the taste. Bon appetit!
