Skillet Rice with Stewed Meat
Even plain rice with stewed meat can take on a whole new flavor. You'd think nothing could be simpler than rice and canned stew in a skillet—but add a few vegetables, cook it a little differently, and suddenly it's a completely different dish. Fragrant, fluffy rice studded with vegetables and tender pieces of stewed meat is a crowd-pleaser.
Cooking method
-
Step 1:
How do you make skillet rice with stewed meat? Start by gathering everything you need. Use whatever rice you like for this dish. For the meat, I'd recommend a beef stew—it has far less fat. Ideally, use homemade stewed meat, where you know it's real meat and not some imitation. Otherwise, stick to a canned stew from a brand you trust. (In the US, look for canned stew or braised beef in the international aisle.)
-
Step 2:
Add vegetable oil to a skillet. Cut the onion into pieces and add it to the pan. Feel free to use more onion if your family doesn't mind.
-
Step 3:
Peel, wash, and coarsely grate the carrot. Add it to the skillet with the onion.
-
Step 4:
Set the skillet over medium heat and fry the vegetables for 5–7 minutes, stirring so they don't scorch.
-
Step 5:
Open the can of stewed meat, turn it out onto a cutting board, and cut it into pieces—or just mash it with a fork.
-
Step 6:
Add the pieces of stewed meat to the skillet with the sautéed vegetables.
-
Step 7:
Stir everything together and fry the vegetables and meat for 5 minutes. The liquid from the stew should cook off completely.
-
Step 8:
Rinse the rice thoroughly in warm water, add it to the skillet with the meat and vegetables, and stir.
-
Step 9:
Now fry the contents of the skillet over medium heat for 5 minutes, stirring. Don't skip this step—toasting gives the rice a richer color and aroma, and helps it stay fluffy instead of clumping together.
-
Step 10:
Now pour in the warm water, add salt and pepper, stir, and cover with the lid.
-
Step 11:
Cook the rice and stewed meat over low heat for 20–25 minutes, until the rice is done. The exact time depends on the variety of rice you're using.
-
Step 12:
Our rice with stewed meat is ready to serve. I like to bring it to the table in small individual serving skillets.
-
Step 13:
Enjoy!
- You don't have to make this dish with plain white rice. It works just as well with brown rice, red rice, or even a wild rice blend—and every time it turns out delicious and just a little different. If you like, you can also toss in some bell pepper cut into strips. It's perfect for a quick, hearty lunch or dinner.
