Chicken, Mushroom, and Cucumber Salad

Just three main ingredients, not counting the dressing! This salad of poached chicken, sautéed mushrooms, and fresh cucumber is a lifesaver for busy cooks who never seem to have enough time. Serve it as a light dinner on its own, or as a lunchtime starter.

    How do you make a salad with mushrooms and chicken? Measure out your ingredients. Poach the chicken breast ahead of time, ideally in salted water so the meat comes out more flavorful. For extra flavor, add some spices and herbs to the cooking liquid. Then drain and pat the chicken dry. You can use wild mushrooms in place of the cremini.

    Clean and wash the mushrooms, then pat them dry to remove excess moisture. Cut them into slices of whatever size you like.

    Heat a skillet with some vegetable oil over medium heat. Sauté the mushrooms for 5 to 7 minutes, stirring. Keep liquid out of the pan so the oil doesn't spatter.

    Cut the poached chicken breast into cubes. Make them as big or small as you like.

    Wash the cucumbers well and pat them dry. Cut them into sticks. Peel them first if you like—I left the skin on.

    In a salad bowl, combine the poached chicken, mushrooms, cucumbers, and dill. Dress with mayonnaise to taste. You can use sour cream instead, or mix the two in equal parts.

    Toss the salad well and it's ready to serve.

  • Vegetables are best scrubbed with a brush or firm sponge under running water.
