Breaded Chicken Cutlets in a Skillet

Step 1:
Gather your ingredients. Rinse the chicken breast well and cut it into small, thin slices. Rinse the meat once more and pat it dry with paper towels. To help the cutlets cook through faster, you can pound the pieces with a meat mallet.

Make the egg wash. Crack the egg into a bowl and season with salt and ground black pepper to taste. Add any other spices or seasonings you like.

Beat the egg with a fork or a hand whisk until smooth — there's no need to whip it into a thick foam with a mixer or blender.

Dip each piece of chicken into the egg wash so it's coated on all sides.

Then dredge the egg-coated chicken in breadcrumbs on all sides. You can buy ready-made breadcrumbs or quickly make your own from dried bread in a coffee grinder. Just make sure they're fresh and don't smell stale.

Pour the vegetable oil into a skillet and heat it up. Add the breaded chicken to the hot oil. Fry over medium heat on one side until golden, then flip and cook the other side for 3 minutes. Cover the pan with a lid and cook the cutlets another 7 minutes or so. Remove the lid, let them dry out over the heat for 2 minutes, then take them off the pan.
