Step-by-step cooking

Cooking time: 15 min
  1. Step 1:

    Step 1.

How to make scrambled eggs with sausage and cheese? Prepare all the products at once, so as not to waste time on it later. After all, breakfast should be fast.

  2. Step 2:

    Step 2.

Start with the sausage. I have semi-smoked, but generally smoked, boiled, ham and even sausages will do. Cut the sausage into large chunks, sausage — wheels. I cut the sausage into rings, and then into quarters.

  3. Step 3:

    Step 3.

Put the pan on medium heat and pour oil on it. Warm up the oil well and send the sausage to fry. Here, too, is your choice. You can make it more fried, or you can slightly stew the sausage in its own juice. Adjust the roasting by the force of the fire.

  4. Step 4:

    Step 4.

While the sausage is frying over medium heat, finely chop clean dry greens.

  5. Step 5:

    Step 5.

Grate the cheese on a coarse grater.

  6. Step 6:

    Step 6.

And now drive one egg into the bowl. Because, firstly, it is easier to get the shell from here if it gets there, and secondly, if the egg is spoiled, you will throw it away in time without pouring it into the pan.

  7. Step 7:

    Step 7.

Then carefully pour the eggs into the pan. Try to get the yolks between the pieces of sausage, so the scrambled eggs will look more beautiful. Fry the eggs first over high heat, then, when the protein grabs, on a small one, so that the yolk remains liquid inside.

  8. Step 8:

    Step 8.

Then add salt to the eggs, season to taste with spices that you like. And sprinkle cheese on top — try to pour it on hot eggs, then it will melt.

  9. Step 9:

    Step 9.

Then you can cover the pan with a lid and wait for three minutes if you like a harder yolk. Or just wait for the cheese to melt. Serve the fried eggs hot or in a frying pan, or dividing it into portions, on plates. When serving, sprinkle it with chopped herbs on top. Enjoy your meal!

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.

Any cheese is suitable for this dish — hard, semi-hard, soft, like mozzarella. The main thing is that it is delicious, high-quality, without milk fat substitutes and melts well.
