    How do you make fried eggs with sausage and cheese? Get everything ready up front so you don't lose time later — breakfast should be quick.

    Start with the sausage. I'm using a semi-smoked kind, but smoked, cooked, ham, or even hot dogs all work. Cut sausage into large chunks and hot dogs into rounds. I cut mine into rings and then into quarters.

    Set a skillet over medium heat and add the oil. Heat it well and add the sausage to fry. It's up to you here — brown it hard, or gently let it warm through in its own juices. Control it with the heat level.

    While the sausage fries over medium heat, finely chop some clean, dry herbs.

    Grate the cheese on a coarse grater.

    Now crack each egg into a small bowl first. This way it's easier to fish out any bits of shell, and if an egg turns out to be bad you can toss it before it ever hits the pan.

    Then gently slide the eggs into the skillet. Try to settle the yolks between the pieces of sausage — it looks nicer that way. Fry the eggs over high heat at first, then lower it once the whites set, so the yolks stay runny inside.

    Salt the eggs and season with whatever spices you like. Scatter the cheese on top while the eggs are still hot, so it melts.

    If you like a firmer yolk, cover the skillet and give it about three minutes; otherwise just wait for the cheese to melt. Serve hot, either straight from the skillet or divided onto plates, sprinkled with chopped herbs. Enjoy!

  • Always wash eggs before using them — even a shell that looks clean can carry harmful bacteria. A food-safe wash and a brush work best.
  • Use a high-smoke-point oil for frying. Every oil is good only up to a certain temperature — its smoke point — beyond which it starts to burn and forms harmful compounds. Refined oils (such as sunflower, olive, or grapeseed) handle heat better and are the safest choice for frying.
  • Any cheese works here — hard, semi-hard, or a soft one like mozzarella. Just make sure it's good quality, tastes great, and melts well.
