Puff Pastry Chicken Pie
Make this simple, delicious pie in half an hour! A chicken pie from store-bought puff pastry is welcome on any table — for a special occasion or just because. It's hearty, savory, and easy to make. And you can round out the filling with all kinds of vegetables and mushrooms!

Step 1:
How do you make a chicken pie? Gather the ingredients. Take the puff pastry out of the freezer about an hour and a half before you start and let it sit on the counter at room temperature, still in its package. Mine is a square made of two sheets.

Wash the chicken breast, pat it dry, and cut it into cubes. You can use raw chicken, or boiled, fried, or smoked.

Peel the washed carrot and grate it on the coarse side of a grater. The carrot adds juiciness and color to the pie. If you're not a fan, you can leave it out.

Step 4:
Peel the onion and cut it into small dice.

Step 5:
Grate the hard cheese on the coarse side of a grater.

Sauté the diced chicken with the carrot and onion in vegetable oil for 7–10 minutes. Season with salt and pepper to taste. Turn off the heat, take the pan off the burner, and let it cool.

Stir the grated cheese into the sautéed, slightly cooled meat and vegetables.

Lightly grease a baking dish and lay one sheet of pastry in it, letting the edges come up the sides. Spread the prepared filling evenly on top.

Cover with the second sheet of pastry, pinching the edges closed all around. Prick the top with a fork and brush it with beaten egg. Sprinkle with white sesame seeds. Bake the pie in an oven preheated to 350°F (180°C) for about 30–40 minutes.

Take the finished pie out of the oven — you can serve it right away, even hot.

- Root vegetables are best scrubbed with a brush or a stiff sponge under running water.
- Keep in mind that every oven is different. Your temperature and timing may vary from what's in the recipe. Getting to know how your own oven behaves is the key to any successful bake.
- To keep onions from stinging your eyes, rinse both the onion and your knife in cold water first. And your cutting board won't hold onto that oniony smell if you rub it with a slice of lemon before chopping.
