Cooking method
-
Step 1:
Gather all your ingredients. Use any cut of pork: leg or shoulder if you like leaner meat, or neck or belly if you prefer a bit of fat. You can even swap the pork for beef or veal. And use fresh, seasonal vegetables.
-
Step 2:
Rinse the meat well, pat it dry, and cut it into thin strips.
-
Step 3:
Pour the soy sauce over the meat. Choose your soy sauce carefully. Stores are full of cheap versions these days, but don't go for the low price — buy only naturally brewed soy sauce. Better still, look for one made specifically for marinades.
-
Step 4:
We only need the juice from the lemon, so you can also use store-bought lemon juice. If you're juicing the lemon yourself, first rinse it under very hot water so it yields more juice, and use a small strainer to keep the seeds out of the marinade.
-
Step 5:
Add the minced garlic. I pressed mine through a garlic press, but you can grate the cloves on a fine grater or chop them with a knife.
-
Step 6:
Stir and let the meat marinate for about 15 minutes.
-
Step 7:
Heat the vegetable oil in a skillet. Any vegetable oil works, but since we're frying, it must be refined so it doesn't scorch in the pan. Add the meat without the marinade (save the marinade) and fry it over medium heat until half cooked, about 7 minutes, then remove it from the pan.
-
Step 8:
Peel the vegetables. Cut the carrot and pepper into strips, and the onion into rings or half-rings.
-
Step 9:
Add the vegetables to the same skillet.
-
Step 10:
Fry them for about 5 minutes, stirring constantly.
-
Step 11:
Return the meat to the skillet.
-
Step 12:
Pour in the marinade.
-
Step 13:
Add the ground hot pepper. Stir everything and simmer over low heat for about 7 minutes, until the meat is fully cooked.
-
Step 14:
Serve the pork and vegetables right away, while the dish is hot. Enjoy!
