    Clean the membranes off the roe.

    Heat the vegetable oil in a skillet and spoon in the loose batter.

    Fry the fritters on both sides. Blot off any excess oil by setting them on paper towels. They come out plump and fluffy.

  • Today I was cooking fish and had some roe left over to use up, so I decided to make roe fritters. What kind of fish? Whiting — the cheapest fish at our stores. But you can use any unsalted fish roe. I make my own breadcrumbs from leftover bread and rolls; it turns out much cheaper than store-bought, and you know exactly what went into them.
