Quick pies on dry yeast

A simple recipe for yeast pies with any filling. From this dough, you can cook fried or oven-made pies with a filling to your liking. They are soft and airy the next day. The dough is prepared quickly, does not require proofing.

    Pour in the sifted flour. I poured 320 grams at once. You can pour not all the flour at once, but most of it and then adjust the consistency of the dough on the table in the second stage described below.

    Mix everything thoroughly with a spoon until all the water is absorbed into the flour.

    Boil the rest of the water (125 ml) and pour it into a bowl with dough.

    Quickly mix the dough until all the flour lumps disappear. The dough turns out to be quite sticky.

    Sprinkle the table with sifted flour and spread the dough. We knead it with our hands, gradually adding flour. What consistency should the dough be? As soon as it does not stop being sticky, we do not add flour anymore. It took me exactly 50 grams of flour to get it. In total, I needed 370 grams of flour (320 in the dough and 50 in the podpyl), as I indicated in the recipe. You may have more or less of it, since all the flour is different.

    The dough turns pliable and elastic. We form a ball out of it. He will not need time for proofing. We will cook right away.

    Divide the dough into equal pieces and roll them into balls. I got 7 pieces weighing about 70-75 grams. You can divide the dough into 10 pieces weighing about 50 grams, so that the pies come out smaller in size.

    We knead each piece with our hands into a medium-thick cake. We spread the filling. I used mashed potatoes mixed with fried onions as a filling. You can stuff the pies with stewed cabbage, cottage cheese, jam, etc .

    Pinch the edges tightly, forming an oblong pie. We press the seam of the mute.

    Preheat the frying pan with the addition of vegetable oil, which should reach half of the pies. My frying pan has a bottom diameter of 20 centimeters, I needed 200 ml of oil. Fry the pies on medium heat on one side until browning. I had them fried for about 5-7 minutes.

    Turn them over to the other side and fry until cooked. It took me another 5 minutes. We remove the finished pies from the pan and fry the next batch. I didn't add any more oil. The pies were not greasy, so I didn't need a paper towel.
