Cabbage and Meat Patties
A great alternative to plain meat patties with a cabbage side! Making patties from cabbage and ground meat lets you cook the meat and the vegetable together in one dish, which streamlines the whole process and cuts down your time in the kitchen. It's also a clever way to sneak in cabbage for anyone in the house who claims not to like it, quietly working it into the menu for everyone. Adding cabbage to the meat makes the dish more budget-friendly, too — and, just as importantly, it makes the patties especially juicy, tender, and tasty.
Cooking method
-
Step 1:
Gather the ingredients from the list.
-
Step 2:
Remove the tough outer leaves from the head of cabbage and cut out the core. Cut the cabbage into chunks and run them through a meat grinder or blender — you can also just use a regular kitchen knife. The main thing is that the cabbage be juicy and young. Add a pinch of salt to the bowl of cabbage and mix it with your hands; don't pour off the juice it releases.
-
Step 3:
Peel the onion and cut it into small dice. Put the ground meat in a bowl — a 50/50 pork-and-beef blend works best for juicy, tender, tasty patties. Add the ground cabbage, onion, and seasoning to taste: salt and ground black pepper. Mix the mixture thoroughly.
-
Step 4:
Crack the egg into the bowl as well — it binds the mixture so the patties don't fall apart while frying. Mix until the mixture is uniform.
-
Step 5:
To let the ingredients meld and soak up the seasoning, chill the mixture in the refrigerator for half an hour.
-
Step 6:
Then, with wet hands, shape small patties. Dredge them in flour on both sides. You can use breadcrumbs instead of flour if you prefer.
-
Step 7:
Heat the vegetable oil in a skillet. Add the patties and fry over medium heat on both sides until browned.
-
Step 8:
Then pour a little water into the skillet. Cover and fry the patties for about 30 minutes over medium heat. The cabbage and meat patties are ready. Serve them with sour cream, mayonnaise, or another sauce, plus fresh herbs and bread, with or without a side dish. Enjoy!
