Foil-Baked Pork and Potatoes

Dishes baked in foil have a flavor and aroma all their own. Foil baking is also wonderfully convenient — no dishes to scrub afterward. You can even make pork and potatoes in individual portions by shaping little foil pouches for each serving.

Cooking method

    Press the garlic through a garlic press. Combine the mayonnaise, oil, mustard, garlic, and spices.

    Rinse the pork, pat it dry, and cut it into medium pieces.

    Add the pork to the marinade and toss to coat well. Let it marinate for 1–2 hours.

    Peel the potatoes and slice them into rounds.

    Grate the cheese on the coarse side of a grater.

    Line the bottom and sides of a round baking dish with a double layer of foil and grease it with oil. Arrange the potato rounds on the bottom and season with salt and pepper.

    Spread the meat evenly over the top, marinade and all.

    Sprinkle with the grated cheese.

    Cover the dish with a foil lid. Bake in an oven preheated to 350°F (180°C) for about 40 minutes. Then remove the foil and bake another 15 minutes, until the cheese is golden.
