Eggless Kefir Crêpes
Lacy, thin crêpes made with kefir and no eggs. By now we're used to the idea that crêpes can be made without milk or kefir, but the fact that they turn out beautifully without eggs is genuinely surprising. And yet it's true. Minimal ingredients, and you've got lovely, delicious, lacy crêpes!

Step 1:
Gather the ingredients for the crêpes. They're made without eggs, using baking soda. Any kefir works — I'm using 1%. It's best to take it out of the fridge ahead of time so all the ingredients are close in temperature. Sift the flour first. Get a skillet ready for the crêpes and put water on to boil.

Step 2:
Pour the sifted flour into a deep bowl and add the kefir, salt, sugar, and baking soda. Mix thoroughly until the batter is smooth and lump-free. It's best not to add any more sugar, or the crêpes will scorch while frying.

Quickly pour the boiling water into the batter and stir. You'll get a thin batter. Mine came out a bit thick, so to make thinner crêpes I added another 50 ml or so of hot water. The consistency depends on the kefir you use.

Pour the vegetable oil into the batter and stir. Let the batter rest for fifteen to twenty minutes, stir again, and you're ready to fry. During that time the flour develops its gluten and everything blends together properly.

Step 5:
It's best to use a dedicated crêpe pan — ideally one you only use for crêpes. Set it over the heat and get it good and hot. Grease the bottom with oil and pour in the batter, swirling to spread it evenly across the whole pan. Cook the crêpes on both sides. You don't have to re-grease the pan for each one — they cook easily and don't stick.

Brush a little butter between the finished crêpes so they don't stick together. Eggless kefir crêpes come out lacy, thin, and delicious. They don't tear and work well for wrapping fillings. They pair great with sweet fillings — preserves, jam, sweetened condensed milk — as well as savory ones like cheese, fish, or ham.
