Crêpes with Caramelized Banana Filling

Step 1:
To make the crêpes, combine the eggs and sugar. Use a deep bowl so it's easy to beat with a mixer.

Then pour the milk in with the eggs. Add a pinch of salt and a little vegetable oil.

Stack the finished crêpes on a plate and cover them right away with a lid so they don't dry out.

For the banana filling, peel the bananas and cut them into rounds about ¼ inch (0.5 cm) thick.

Melt the butter in a hot skillet and add the sugar. Stir. Add the banana slices and let them sit in the caramel for 20–30 seconds per side.

Spoon a little banana filling onto each crêpe and roll it up or fold it into a triangle.

Serve the warm, fragrant crêpes with tea or coffee. You can drizzle them with chocolate or berry syrup. Enjoy!
