Fried Rice Patties
Kids won't eat rice? Fried rice patties are a great fix — and they're delicious! Serve them for breakfast with tea and jam, or at lunch as a side with chicken; they're a truly versatile dish. In my family, plain rice isn't a hit, so I have to get creative. For a side, I make rice with vegetables or these rice patties. I like mine thicker and juicier; my son likes them thinner and crispier. The dish is easy and comes together quite fast. This amount of ingredients makes 21 patties. You can bake them in the oven, but they'll turn out a bit drier. If you've never tried these before, you really should! I hope they become a favorite in your family, too.

Step 1:
How do you make rice patties? Gather your ingredients.

Cook 2 cups of rice in 5 cups of water. It should turn out sticky, like a thick porridge. Let it cool slightly.

Transfer the warm rice to a bowl.

Add 2 eggs.

Add salt and mix. If the mixture isn't sticky enough, add a little flour or starch at this point.

Just like when you were a kid, roll the mixture into balls. It helps to wet your hands with water.

Take a ball, flatten it into a patty, and coat it in breadcrumbs. You can also use flour or semolina for the coating.

Fry in a skillet until golden brown. While the first batch of patties fries, don't waste time — shape and bread the next batch.

Flip and fry the other side. The cooking time depends on your pan — in a thin-bottomed skillet it goes fast; in a heavy-bottomed one it takes about twice as long.

Step 10:
The rice patties are ready. Serve them with a sweet sauce or jam, or as a side dish with meat or fish. Enjoy!
