Khychiny with Meat
A truly delicious dish that no one can resist! Khychiny are ultra-thin stuffed flatbreads from the Caucasus. I've made them plenty of times using the classic recipes — usually with a potato or cheese filling, or a mix of the two. But now that I've got the classics down, today I'm experimenting: my filling is pork! Cook along with me.

- Make the dough:
- Pour the kefir into a deep, roomy bowl and add the sifted flour, baking soda, and salt. Knead into a dough — it should be very soft and pliable. Cover it with a kitchen towel and let it rest for half an hour.
- Now the filling:
- Rinse the pork and peel the onion. Grind the meat and onion together using the fine plate of a meat grinder. Rinse and dry the parsley, chop it finely, and add it to the meat. Season with salt and pepper (if the mixture seems dry, work in a splash of cold water) and mix thoroughly.
- On to shaping:
- Divide the dough into balls about 2.5 inches (6 cm) across and roll each into a thin round. Place filling in the center, gather the edges up over the top, and pinch them tightly closed into a sealed pouch. The tricky part is rolling that pouch back out into a thin round: first flatten it with your hands, then finish with a rolling pin.
- Cook the khychiny in a completely dry skillet over medium heat until browned on both sides. If the dough puffs up, gently pierce it with a fork to let the air out. While they're still hot, brush the finished khychiny with butter.
- Stack the khychiny and serve.
- Enjoy!
