Pork Liver Stewed in Sour Cream with Onions

The real secret to a juicy, fragrant dish is a little pork belly: the fat it renders as it fries gives the liver an irresistible flavor. Here's how to make it!

How do you make pork liver stewed in sour cream with onions? Use a pork belly with plenty of fat. Cut it into small pieces.

Heat a skillet until hot and fry the pork belly over high heat on all sides until golden. As it cooks it renders its fat, which makes the finished dish juicy and fragrant.

Peel the onions and slice them into half rings.

Add the sliced onions to the skillet. Stir well and cook everything together another 3–5 minutes, until the onions soften.

Rinse the pork liver and cut it into medium pieces. Don't forget to trim away any membranes and fat.

Once the onions are nicely fried, add the chopped liver to the skillet. Season with a little salt to taste. Stir and cover. Fry the liver for 7–8 minutes, stirring now and then. Then break one piece open right in the pan to check that the inside is an even color with no red juices running out. To be safe, let it cook another 2–3 minutes.

Separately, whisk the flour and sour cream into the cold water until smooth. Pour the mixture into the skillet and stir.

Bring everything to a boil. The sauce will thicken a little as it heats. If it seems too thick, add a splash of water and bring it back to a boil. You can serve it right after cooking. Stewed liver is best with mashed potatoes. Enjoy!
