Pan-Fried Pork in Soy Sauce

Step 1:
How do you pan-fry pork in soy sauce? It couldn't be easier! First, gather the ingredients on the list. You want boneless pork — just the meat. Pick whichever cut you like: leg, shoulder, loin, neck, tenderloin, and so on. I'm using tender, soft tenderloin.

Step 2:
Rinse and pat the pork dry. Cut it into small, thin pieces.

Peel the garlic and finely mince it, or press it through a garlic press. You can swap the fresh garlic for 1 teaspoon of garlic powder.

Heat the vegetable oil in a skillet over medium-high heat. Stir-fry the meat for about 10 minutes, until golden brown.

Pour the soy sauce into the pan. Simmer the pork, stirring, for another 5 minutes over medium heat. The pork should soak up the sauce all over. You can use semisweet teriyaki sauce in place of regular soy sauce. That'll give the meat a slightly sweet edge.

Add the minced garlic, paprika, khmeli-suneli (a Georgian herb-and-spice blend), and the freshly ground pepper mix. Cook everything together, stirring, for another 2 minutes. Go easy on salt when you're using soy sauce. I usually don't salt dishes that already have soy sauce in them.

Sprinkle the finished pork with fresh herbs and serve with any side dish. Enjoy!
- Besides pork, you can use any other meat in this dish. Just keep in mind that the cooking time, flavor, and calorie count will change. Beef, for example, takes longer than pork, while chicken breast or turkey takes less.
- Remember that soy sauce is quite salty. Cut back on the total amount of salt, or you risk over-seasoning.
- Every oil is only good up to a certain temperature — its smoke point, past which it starts to burn and forms harmful compounds. For frying, choose a neutral oil with a high smoke point and keep the heat moderate.
