Flourless Protein Cottage Cheese Pancakes (Syrniki)
Treat yourself to healthy indulgences more often! These protein syrniki (cottage cheese pancakes) are a great pick for a snack or breakfast — wholesome, low in fat, and packed with protein. You can eat them after a workout at the gym or late in the evening without any guilt about your waistline. Serve them with your favorite berries or a drizzle of plain nonfat yogurt, and dress them up however you like. The golden rule for protein powder: don't use it to replace a full meal — have it only after a workout or in the evening before bed.
- You can use ready-made lemon zest, or grate your own. To do that, scrub the lemon thoroughly with hot water and a brush to remove any coatings citrus is often treated with, then pat it dry and grate the zest on a fine grater — take only the thin yellow layer, avoiding the bitter white pith underneath.
Put the raisins in a bowl and cover with cold water. Rinse them, then drain. Cover them again, this time with hot water, and let them sit for 10–15 minutes until they plump up and soften.
Put the nonfat cottage cheese in a separate deep bowl and add the protein powder. Blend the cottage cheese and protein into a smooth mixture — an immersion blender works well. You can also press the cottage cheese through a sieve first, then stir in the protein.
Crack the egg into the cheese mixture, add the egg whites, sprinkle in the bran, and pour in the oil. Stir everything until smooth.
Drain the raisins and spread them on a paper towel to dry. Fold the dried raisins into the cheese mixture along with the lemon zest and mix.
Shape the mixture into patties and fry them in a hot, completely dry skillet — no oil — on both sides. A heavy-bottomed nonstick pan works best. Serve dusted with powdered sugar and topped with strawberries if you like. Enjoy, and have a productive day!
