Lemon zest can be used ready-made. If it is not ready, you can remove the zest from the lemon yourself. To do this, the fruit must be thoroughly washed with hot water with a brush to wash off all the compounds that citrus fruits are usually treated with. Then the lemon should be dried and grated on a fine grater. An exceptionally thin yellow peel is removed without touching the white layer.

1. Put the raisins in a bowl, pour cold water. Mine, after which we drain the water. Re-fill the raisins, but with hot water. Leave for 10-15 minutes. During this time, it will swell, become soft.

2. We put the low-fat cottage cheese in a separate deep bowl, pour the protein here. Beat the cottage cheese with protein into a homogeneous mass. This can be done with an immersion blender. You can also rub the cottage cheese through a sieve, and then mix the protein into it.

3. In the curd mass, break the egg, spread the egg whites, pour the bran and pour vegetable oil. Mix everything until smooth.

4. Drain the water from the raisins, spread it on a paper towel, give it time to dry. By the way, you can pour water into a glass and drink it - it's very useful. Spread the dry raisins into the curd mass together with lemon zest, mix.

5. We form tortillas from this mass, fry in a hot frying pan on both sides. Do not add oil during frying, the pan should be completely dry. It is better to choose a frying pan with a thick bottom and non-stick coating.

Serve on the table sprinkled with powdered sugar and supplemented with strawberries if desired.
