Flatbread with Cheese and Garlic
Why not make some fragrant flatbreads for dinner?! These cheese-and-garlic flatbreads work for breakfast or dinner alike. For dinner, pair them with a fresh vegetable salad; for breakfast, a cup of good coffee. You may need a little more or less flour — it all depends on the kefir, which can be thick and rich or thin and runny. Runnier kefir will naturally soak up more flour, and flour itself varies in quality. So go by the dough: it should be pliable and not stick to your hands.

- Mix the salt and sugar together in a small container, such as a cup. 2. Sift the flour into the bowl you'll knead the dough in, and add the salt-and-sugar mixture. 3. Pour the kefir into a small bowl, stir in the baking soda, and mix. 4. Crack the egg into a separate container and beat it with a fork until smooth. 5. Combine the egg with the kefir and mix, then pour the liquid ingredients into the dry ones. 6. Knead the dough — first in the bowl, then turn it out onto the counter and knead a while longer. It should come out soft and pliable. 7. Put the dough in a bag and let it rest for half an hour. Plastic wrap works just as well; the key is to keep the dough from drying out or forming a crust. 8. Meanwhile, prepare the filling: grate the cheese, wash and finely chop the green onion and dill, and peel the garlic and run it through a press. 9. Put the cheese in a bowl, add the greens — onion and dill — along with the crushed garlic, and mix. 10. Once the dough has rested, divide it into 6 equal pieces. Roll each piece into a round on a floured surface. 11. Now spoon two tablespoons of filling into the center of each round. Lift the edges of the dough and gather them into a pouch. 12. Turn the flatbread seam-side down and gently roll it out with a rolling pin, taking care not to tear the dough. Shape all the flatbreads the same way. 13. Fry the flatbreads one at a time in a hot dry skillet with no oil. Cook on both sides until golden. 14. Brush the finished flatbreads with butter while they're still hot, and stack them on top of one another. Delicious — dig in!
